A deep-fry turkey kit is pretty reasonably priced. They can run from $50-$200 and you can find them at Amazon, Target, Home Depot and others.

Step by step guide to make the perfect deep fried turkey:

What will you need? A good turkey fryer kit that includes the fryer, the basket where you put the turkey, an oil thermometer and something to lower the basket into the fryer. You will also need cooking oil, a meat thermometer, water, measuring cups, propane, and a roasting pan.

1. Deep-fry your turkey outside. I know this sounds obvious but you never know.
2. Pick a location that is level. The driveway is an excellent choice. If not, choose a place with little to no vegetation like a patio or sand pit.
3. Have a fire extinguisher and sand nearby. If there is an accident you’ll want to contain the hot oil.
4. Read the directions. Ensure you have the right size turkey for the fryer you bought. Most allow no more than 15-18 pounds.
5. Use a defrosted turkey. Before you brine or marinate the turkey, make sure it is fully defrosted a few days before thanksgiving. Also make sure it is cleaned off and any pop up thermometers have been removed.
6. Don’t over season the bird. Brining, marinating or injecting will add flavor to the turkey, but the process of deep-frying it locks in much of the flavor and juices. Don’t go overboard with seasoning the bird.
7. Don’t use any brine that has sugar in it (such as brown sugar or pineapple juice). The bird will come out black if you use a brine containing sugar.
8. Measure the amount of oil you need. You don’t want to put too much oil in the stock pot before you add the turkey so you need to figure out how much oil you will need. Put the defrosted bird (before any marinating) in the basket and lower it into the pot. Then add enough water to cover the turkey just above its legs. Then remove the basket (with the bird inside). Use your measuring cups to measure the amount of water that is left in the pot. That will tell you exactly how much oil you need. (Write the amount down if you think you will forget.)
9. Use peanut oil. It has a higher burn point and adds flavor. IMPORTANT: If you are going to use peanut oil you need to make sure you don’t have anyone at your table that has a peanut allergy! Find this out in advance. You can also use vegetable oil.
10. Fill the pot with oil.
11. NEVER fill above the max fill line. Use only the amount of oil you measured in the previous step.
12. Heat the oil to 375 ˚F with the lid on. Use your oil thermometer that came with your turkey fryer kit. This should take anywhere from 20-40 minutes. Keep an eye on the pot and check every so often to make sure you have it at the correct temperature. I like to heat the oil above the cooking temperature (350 ˚F) because once you put in the turkey the oil temperature will drop by 20 degrees or more. When it is ready turn the heat off to put the turkey in.
13. Cook a fully defrosted and dry turkey. Any moisture in the turkey will bubble up and possibly cause oil to splatter. Avoid this by making sure the turkey is defrosted and dry.
14. Use two people to put the turkey in the pot. I have found that using a long pole (maybe a broom handle) to lower the basket into the pot with two people will reduce the possibility of getting hot oil splattered on you. Make sure you are slow and steady when lowering the basket into the turkey fryer.
15. Cover the lid. Once the turkey hits the oil it will quickly bubble up. Use the lid to prevent oil spatter.
16. Turn the heat up after you add the turkey to the pot. Once you add the bird, the temperature will decrease. Increase the heat to get the temperature back to 350 ˚F.
17. Make sure the oil thermometer is not touching anything.  To get an accurate temperature reading of the oil, you need to make sure the thermometer isn’t touching the turkey.
18. Plan on cooking the turkey for three minutes per pound of bird. For example, a 15 pound turkey should take about 45 minutes to cook. A little before the expected finishing time, check on it. If it is floating, it is most likely done.
19. Check the turkey temperature with a meat thermometer. Use the meat thermometer to check the internal temperature of the turkey. Your target temperature is 165 ˚F.
20. Let the turkey drain. Lift the basket (containing the turkey) out of the oil and let it drain for a minute or so. Most turkey fryers have a hook on the basket that will allow you to attach it to the top of the fryer to let the oil drain. After it drains, transfer the bird to a pan.
21. Carve and Serve!

Voila, your first beautiful, deep fried turkey! It takes a few steps, but it is pretty easy. With a little bit of preparation you will have an amazing tasting turkey that takes half as much time as cooking in the oven. Don’t forget to use the cooking time to share a few beverages with your guests!

Final note: To dispose of the oil, let it cool while you are enjoying your feast and then pour it back into the container it came with. I would contact your local municipality as they can help in the disposal of the oil. You can reuse the oil 1-2 more times, but I prefer not to.
